The brew
Water weights are total on the scale.Rinse and warm
Rinse the paper filter with hot water, then empty the server. Add 15g of medium-fine coffee and level the bed.

Start the timer and pour to 45g, wetting all the grounds. Give the brewer a gentle swirl and wait until 0:45.
0:45 / first pour
Pour slowly in small circles until the scale reads 150g. Let the water level fall a little without letting the bed dry out.
1:30 / finish the pour
Pour to 250g total. Swirl gently to level the bed and let it drain. A single serving often finishes around 2:30-3:30; a larger batch may take longer.
Give it a moment
Swirl the server, pour and taste as it cools. If the brew feels sharp and thin, try a finer grind. If it is dry or slow to drain, try a coarser grind.

Find your sweet spot
Not quite right?
Sharp or sour
Let the cup cool a little before judging it. If it still tastes sharp and thin, try a slightly finer grind. With espresso, you can also try a little more yield. Change one thing at a time.
Bitter or dry
Try a slightly coarser grind, and check your brewer is clean. For manual methods, gentler pouring or stirring can help. With espresso, check the shot is not running unusually slowly.
Weak or watery
Check the coffee and water weights first. If the ratio is correct, try a slightly finer grind. For immersion methods, check that all the grounds were wet and the coffee had enough time to brew.
