A suggested starting recipe, not a fixed rule. Adjust to your taste and equipment.

The brew

  1. Set up upright

    Fit a rinsed paper filter into the cap. Put the upright brewer on a sturdy mug or server and add 15g of medium-fine coffee. No inverted brewing needed.

  2. 0:00 / add the water

    Pour 230g of water at around 92°C. Stir gently to wet the grounds. Insert the plunger just enough to form a seal.

  3. 1:30 / press gently

    Press slowly for about 30 seconds, stopping when you hear the first hiss. Never force the plunger; if it resists, stop and use a coarser grind next time.

  4. Taste your cup

    Give the coffee a stir. For a softer cup, add a little hot water. Keep that amount consistent once you find what you like.

Not quite right?

Sharp or sour

Let the cup cool a little before judging it. If it still tastes sharp and thin, try a slightly finer grind. With espresso, you can also try a little more yield. Change one thing at a time.

Bitter or dry

Try a slightly coarser grind, and check your brewer is clean. For manual methods, gentler pouring or stirring can help. With espresso, check the shot is not running unusually slowly.

Weak or watery

Check the coffee and water weights first. If the ratio is correct, try a slightly finer grind. For immersion methods, check that all the grounds were wet and the coffee had enough time to brew.
