A suggested starting recipe, not a fixed rule. Adjust to your taste and equipment.

The brew

  1. Size the recipe to your pot

    Follow your pot's instructions. Fill the basket level with medium-fine coffee, without tamping. Fill the base with hot water to just below the safety valve; never cover it.

  2. Assemble carefully

    The base is hot, so use a towel or heatproof gloves. Make sure the seal and safety valve are clean, and screw the pot together securely.

  3. Use gentle heat

    Place on low-to-medium heat. Aim for a steady, gentle stream, not a rush. Keep clear of the spout and follow the manufacturer's lid guidance.

  4. Stop before it sputters

    Take the pot off the heat when the stream becomes pale or starts to sputter. Pour promptly. Let the pot cool completely before opening it.

Not quite right?

Sharp or sour

Let the cup cool a little before judging it. If it still tastes sharp and thin, try a slightly finer grind. With espresso, you can also try a little more yield. Change one thing at a time.

Bitter or dry

Try a slightly coarser grind, and check your brewer is clean. For manual methods, gentler pouring or stirring can help. With espresso, check the shot is not running unusually slowly.

Weak or watery

Check the coffee and water weights first. If the ratio is correct, try a slightly finer grind. For immersion methods, check that all the grounds were wet and the coffee had enough time to brew.
